Assigning of composite materials to the components with different number of plies.

Can anyone help me on how to apply and assign composite material to a VT of an aircraft that I have modelled? There is no proper videos on Youtube. I need some guidance. Most of the internal components of the VT are made of laminate composite with different number of plies. How do I start?
