just like regular FEA models, i would say this depends on a few factors, and a convergence analysis would be a nice approach. I mean, start with a small particle numbers, then run a new model with more particles, and so on, and then compare your results. Of course it depends on what you're trying to compute.

I am planning to prepare a model that includes SPH. However, I am new to this. I could not find much information.
Can we say that as the number of particles increases, the results get closer to a certain value? And after a certain number of particles, increasing the particle number wont effect the simulation results? (which is the case for mesh convergence in FEM analyses)
Are there any tutorials, academic paper etc. that you know about the subject and that I can use as a reference?

Attached is a model created by Rodrigo Merigo that performs a machining process using SPH.
For creating your SPH you need to go to Mesh >>Create >>SPH
take a look at Radioss documentation for more details on SPH and the example in the documentation, attached.

You can Perform this Analysis in Radioss or In Motion Solve .It depends on what is the objective of cutting. If it is to see the forces on the tool, heat generation etc then RADIOSS. Please tell me your Objective of Analysis.
