In the Excel file I have there is a column with a few sentences each time that need to be processed. 
I have the "Text Processing" Extension and that needs text files as an input, so how can I convert these cells from Excel to text?

You need to use the 'nominal to text' operator to do so. This will ensure the field you chose will be considered as a text going forward.
