I am a new user of Rapid Miner and trying to use k-means process. I see k is set to 2 and there is no way i can change it. Is there a docuemntation which tells how to change the K?

Not sure what do you mean by "there is no way i can change it".
You should be able to change k (and any other configurable parameters) in the Parameters tab of the operator:
