Is there any update instructions from old version to v2021.1 License Monito
I could not find any Altair Monitor version update instructions

Altair Monitor Quick Start Guide
So far, I have created a brand new v2021.1 Altair Monitor server in CentOS 7.9. But, I would like to know if I can just upgrade from the existing v2016 License Monitor to v2021.1 on the same Linux server.

I was going through old posts on the forum and noticed this one, there is a Monitor upgrade guide available at: https://help.altair.com/accelerator/html/bookshelf/topics/install/monitor_special_considerations.htm
It's been a few releases, so we do have 2023 and 2024 versions available. If you need any assistance with the upgrade, please open a support case and someone can work through that with you. I realize it's been some time on this post, we're hoping to better monitor our forums for questions into the future.
