There are a few points to consider when creating a soil bed. As a quick overview this video gives insight in using EDEM Factories to create material:

The steps I would take to create a soil bed:

1. Estimate number of particles and calculate simulation run time to determine particle size

1. Calibrate the material or use pre-calibrated material

1. Generate a material bed using Volume Packing based in previously determined size and properties
