You can check if your apps are still in the installation folders. Sometimes, Windows may remove the shortcuts of your apps from the Start menu or the taskbar, but the apps are still installed on your system. You can try to create new shortcuts for them or pin them to the Start menu or the taskbar again.
Another way is to disable the Storage Sense feature that automatically frees up space on your system by deleting temporary files and unused content. You can find it in the Settings app under System > Storage. Turn off the toggle switch for Storage Sense. You can also click on Configure Storage Sense or run it now to customize how often and what files are deleted by Storage Sense.
You can also scan your system for any malware or viruses that may be causing your apps to be deleted. You can use the built-in Windows Security app or any third-party antivirus software that you trust. Make sure you update your antivirus definitions and run a full scan of your system.
As for the programs that Windows seems to never remove, like Edge, it's possible that these are considered system apps and are treated differently during updates.
