Can rapidminer do text mining which content is in Chinese

I think no. The text processing functions support mostly English and German, and Arabic (light)

Yes, a simple way is to treat each hanzi as a separate word, but a more advanced way is to use splitting by dictionary (you can load in your own).
I'm only just at the beginning of my Chinese learning so don't have any examples to hand I'm afraid, but expect to be using it for Chinese text mining within 6-12 months as by this time I am hopeful to be able to read & interpret the results a little better.
