"Text mining in 5"

Hi everybody,
I am totally new to this and I try to get the text mining to work. I work mostly with Word and PDF files. I thought I use the Process document from file but I am doing things wrong. When would be a step by step manual out that shows in one example how to mine a text step by step.
Sorry for being so unable to get the thing working.
