I am using Embed to research IoT-related applications. There are some targets with networking functions on the market, such as NodeMCU-32. Does Embed support it? Or does Embed only support the single module esp8266? Thank you very much !

As of now Embed doesnt support NodeMCU . Yes ESP8266 module can be used with Arduino.
You could use Raspberry PI for IOT related application as well .
