How to activate geometric non-linearity in OptiStruct, when in Load Step the Analysis type is set to Explicit?

If you select the 'explicit' analysis solution type, You should see it has set ANALYSIS type as NLEXPL?, If not, then you can select that. There are 2 explicit solution sequences available, 'NLEXPL' (Explicit Dynamic, this is OS native explicit solution sequence) the other is 'EXPDYN' (you can also set this by choosing Radioss Integration as analysis type, that converts the OS deck to Radioss and runs it there) both/either of these solution types have Geometric non linearity by default. The 2 options have quite different input requirements for material non linearity and contact etc, so make sure you know which one you want to use and set options appropriately.
