Hello! I've some questions about the function 'Rebuilde mesh', I don't know how exactly it works or in wich cases I can apply it. Can someone explain me more about this tool?

The new rebuild mesh workflow is dependent on a previous mesh criterea definition. You predefine a criterea for meshing and then run the rebuild mesh on your elements and it will regenerate the mesh for the selected elements based on your criterea.
