How do assign a property to elements? Why has what I was working on vanished from the screen? How do I retrieve it?

It really depends on the solver, but for Optistruct for example you can assign property to elements by the component (indirect assignment)
Or to the elements themselves (direct assignment)
I am unclear what your other question is about?
You can look at the model browser for all the entities in your database and verify they are on
or check the Entity State Browser from the View menu that they are active
