Ho can I mesh my model as shown so that I get differenet cocentric layers as shown in the picture
You can use ELEM OFFSET option available in 3D panel, for more information use link given below.

Since the geometry is mappable in one direction.you can try with solid-map one volume option.see attached screenshot.
