You have a set of complex, irregular shaped enclosed surfaces (mitochondria and myofibril inside muscle cell).

You want to mesh these only using solid hex elements using a quite coarse mesh (the geometry can be simplified and smoothened).

How would you go about it?

Depending on your geometry, maybe it's possible, or not. No general rule for this work.

Have you considered simsolid, which can analyse complex geometries like body parts without any need for meshing?

I tested alot with SimSolid. It's nice tool for designer, but NOT for FEA Engineer /emoticons/default_biggrin.png' srcset='/emoticons/biggrin@2x.png 2x' title=':D' width='20' />
