Can we use edempy to export videos? Is there any example code out there?

The short answer is no. You can't interact with EDEM's video creation tools within the Analyst and there's no functionality within EDEMpy for anything video related. I'm sure there will be a Python library out there to help but you could always export images and stitch them to make a video in a video editor.
