How do you simulate the trajectory of a body under the influence of environmental effects like wind resistance/speed using motion solve?

Environmental effects like this create forces on a body.  In general, you would create an action only force applied to the body, and use an expression to define the force relationship. In the case of aerodynamic effects, your dependent variable would be the velocity of the body, and the equation for the force itself may look like this (available from a textbook or google search):

F= 0.5* Drag Coefficient * air density * velocity^2* frontal Area
