When I am using EDEM Analyst section and try to see colors based on forces/torque or any other display items, it just stays with default blue and does not change any color dynamically? What could be the reason for this glitch?
Have you got Auto Update enabled?

The details is not sufficient enough to suggest you the answer but I feel the following are the reasons.
1) you given color coding but not updated the values, please enable the check box shown in below picture
2) If you are trying to update the variables using the particle shown with circle then at the bottom you should click apply
