Increasing / decreasing elements along edge of mesh saving progress

After changing the number of elements by LMB, I hit mesh.   However when I select the surfaces again and MMB it remesh and I lose my changes.  How to keep the mesh, while allowing to go back into the surface to make more modifications (i.e, adding removing number of elements) ?
