I have used the force controller gravity option but am noticing that it doesn't give a true gravity. Is there any other way to make a geometry move in this manner?

You should be able to select the 'include gravity in Force Calculation' tick box:
Under the geometry section > Mass it best to ensure the mass is setup correctly. EDEM will calculate it from the volume and density if it's a closed geometry but if it's an open shell you may have to set this yourself.
