I solved a model with hyperform (incremental - radioss), and i applied symmetry in the YZ plane. I can see the results in HyperView, but...i can only see the half i modeled, how can i see the complete part with the symmetry applied?

In HV you can contour/display only that part of a model/result for which the data are available in the results or input file. Because of this it is currently not possible to display the 'full' model.
A workaround could be to reflect the original model in HM, export it and reimport this model file in HV as a second model. But you won't be able to contour this half.
